And this dish looks like a well-seasoned lump of pudding. The dumplings are seasoned with toppings like sev, melted butter, spices, onions, and fresh coriander leaves. This gives Locho a delightfully spicy and savoury flavour. Being made from gram flour, it is gluten-free and quite filling due to the dense texture of the dumplings. The gram flour batter is steamed, then cut into pieces and doused in a flavorful mixture of water, sugar, salt and green chillies. This provides Khaman with its unique taste. Unlike the plain white dhokla, khaman can be eaten for breakfast or lunch, either plain or with chutneys or a special kadhi. Lodra’s khaman is renowned for being extra soft and delicious. So much so that street stalls selling fresh Lodra Khaman can be found all over Gujarat!

Khari Sing - Bharuch

Source: Babubhai Zaverbhai Chanawala

While Bharuch is known to be a textile industry town, it is actually more famous for its salted peanuts.
